This sounds like something all women need.  Diet or no diet!  Sounds simply delicious.   I think I'm going to take a stab and it and try it myself very soon.

Mikey...Ummmmm.....I don't think there is such a thing as a sugar free this. :( Do they make dugar free chocolate chips? They must! And maybe some Truvia? That stuff is yummy!

Definitely gonna make this for my wife and I, as we both love chocolate.


Ok, Ok. So I thought this through. Where to put this most incredible and easy recipe?? Since I made these tonight for my BF and I, and I made them BECAUSE I am feeling cranky, crampy, short tempered and all my nerves are alive singing the pain song...I decided this is where the recipe belongs. Cause oh boy did it ever comfort.... ;) ;)


MOLTEN CHOCOLATE LAVA CAKES
(serves 2)
You will need:
Two 6-ounce ramekins (Ramekins are the little round baking dishes, they are  about 3.5 inches across by 2 inches high.)

Ingredients:
4 Tablespoons Unsalted Butter, plus a little more for buttering the ramekins
1 Tablespoon Flour, plus a little more to dust the buttered ramekins
1/3 Cup semi-sweet Chocolate Chips
1 Large Egg, Plus 1 Large Egg Yolk
2 Tablespoons Granulated Sugar

Steps:
1. Heat over to 450 degrees F. Butter the two 6-oz ramekins and dust the inside with flour
2. Place the 4 Tbsp butter and chocolate chips in a small glass bowl and microwave on high in 20-second intervals, stirring after each, until melted and smooth
3. Using an electric mixer (or hand-held), beat the egg, egg yolk and sugar in a medium bowl until thick and lighter in color, about 1 minute. Add the melted chocolate mixture and flour and beat until fully incorporated and smooth.
4. Divide the batter between the prepared ramekins. Set ramekins on baking sheet for ease of getting in and out of oven. Bake until edges are set and center still jiggles slightly, 8-10 minutes. Let stand for 15 seconds. Run a knife around the edge, then invert each cake onto a plate. Dust with confectioner's (powdered) sugar and serve alone, or with fresh mint, fresh berries, vanilla icecream....SERVE IMMEDIATELY.

Note: I added a tiny bit of vanilla extract to these the second time I made them and served with a plop of vanilla ice cream. They are freaking HEAVENLY.

Recipe compliments of magazine "Women's Day" and only slightly altered for easier making.
